I am a person who makes muffins
I don't mean to brag... But on Sunday I made muffins for, like, the second time in two weeks. I whipped up* Rachel's lemon-ginger muffins (using a mixture of chickpea flour, corn flour, cornstarch and tapioca flour in place of the dreaded wheat flour) and H-town dubbed them World's Best Muffins.
Hey, we don't get to eat baked goods very often. I think I'd actually forgotten how good baked goods are.

*And by whipped up, I mean: preheated the oven, chopped ginger and cooked it up with sugar, realized I didn't have any eggs, walked to Vons, bought eggs along with party size bag of barbecue potato chips, and proceeded with recipe while I ate barbecue chips dipped in ranch dressing. The butter for the muffins got nice and soft while I dilly-dallyed, which made for super easy hand-mixing. Who needs a KitchenAid?
I gather someone's gluten intolerant? I've been on a ginger kick myself recently. I got a bunch of candied sliced ginger for Christmas and I am distraught that I finally finished it off. It was just.. sliced ginger totally coated in sugar. Om nom nom nom.

ReplyDeleteAmen for no KitchenAid and those that cannot afford them! And for no wheat. I really need to go gluten free for awhile to let my poor intestines heal, it's just so damn hard and I really don't want to.

ReplyDeleteIf it's a good muffin recipe there should be no mixer needed! The best and fluffiest muffins are mixed by combining all the dry ingredients, all the wet ingredients, and then adding the wet to the dry JUST until they are combined. A fave of mine are meyer lemon blueberry.

@Olivia I have to admit I'm using a mix a friend made for me. but when it runs out I'll have to start experimenting.
ReplyDeleteFor these blueberry muffins with lemon zest, Gluten-Free Girl uses "sweet white sorghum flour" (whatever that is), white rice flour, and tapioca flour 1:1:1 as a wheat flour replacement.
I can't lie... when I got married I registered for a stand mixer just because I like the way they look... like a cute accessory for my kitchen counter. And someone actually bought it for us, and now I love it and actually use it! :)

ReplyDeleteWell, I use as many kitchen appliances as possible so as to minimize any accidental workout I might get that would offset my consumption of baked goods.
ReplyDeleteActually, I'm so lazy that I used the food processor to make these muffins. Because I couldn't bear to get it out to chop lemon zest and ginger and then have to clean the bowl. So I get tossed everything in there. Mixing butter in the food processor is not really the world's best idea. I had to finish it off by hand.

Heidi, do not feel guilty about registering for a KitchenAid! They are heirlooms. Seriously. I have my mom's old KitchenAid. It is 40 years old and it has been lugged around three continents and it is a workhorse. I treasure it. Even if I sometimes love my food processor more.
ReplyDeleteI'm not sure how they'd work with gluten-free flours, but if you've got some candied ginger hanging around waiting to find a home in a baked good, try orangette's ginger scones with lemon zest. best. ever.

ReplyDeleteI try to be One Of Those People That Bake all the time...I've made like two cakes and some sort of burnt brownies and I'm like yeah, I LOVE baking, I'm always in the kitchen...in my dreams...
